i haven't started my own batch, but have wanted to make yogurt for years now - i'm fascinated with live probiotics and cultivating them in healing foods.
random questions: how does the fat content of the milk effect the results of the final batch? does the water on top of store bought yogurt have as much good bacteria as the yogurt itself? does anyone here have cows that they get fresh milk from? what is really fresh yogurt like v.s. what is available in stores? i noticed tribe has ISKON related links - is yogurt a particularly important krsna conscious food? why?

Fri, July 22, 2005 - 5:55 AMWelcome! Great questions. I'll take a shot at them:
1) I *believe* skim milk produces a thinner yogurt than full-fat milk. However, you can thicken up the former by incorporating some powder milk.
2) Don't know for sure about the whey (watery layer on top), but I would assume it also contains the good bacteria. If yogurt is allowed to drain, it also contains much of the sodium.
3) I do not have cows, nor do I purchase raw milk. I use the organic, skim milk found in my grocery store. At least this way, there are no antibiotics or growth hormones used on the cows.
4) I find fresh yogurt to be sweet in comparison to the store-bought kind. The longer you allow it to culture though, the tangier it gets. Mine still doesn't get very tangy after even 14 hrs(!), but it's delicious.
5) I don't know how tribe creates those related links. Probably just the other tribes most common to the members of this one. I joined the krsna tribe for the food. :) Yogurt is a common ingredient in Indian food. -

Fri, July 22, 2005 - 7:50 AM#4 tastier, easy, and way cheaper. I use whole milk and I also find that cooking down the milk a little makes it even more thick. ( make sure to scrape the bottom to prevent burning)
